This sausage originates from a traditional northern Thai ceremony involving the sacrifice of pigs. After the sacrifice, people began experimenting ways of preserving the abundant leftover meat. In one such method, meat was stuffed into the pig intestines, together with herds and spices, and thus created what is now the nation's favourite Northern Thai sausage. This full flavoured delicacy has strong hints of herbs and spices and is slightly salty.
